Description

These Soft and Chewy Funfetti Cookies are packed with colorful rainbow sprinkles, delivering that classic birthday cake flavor in every bite. Buttery, sweet, and irresistibly soft in the center with lightly crisp edges, they’re perfect for birthdays, holidays, or anytime you need a pop of color and joy. No cake mix required — just simple ingredients for homemade sprinkle magic!

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract (or vanilla bean paste)
  • 2 ¼ cups (280g) all-purpose flour
  • 2 tablespoons dry milk powder (optional, for extra richness)
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup rainbow jimmies sprinkles (plus extra for topping)
  • Optional: ¼ cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the egg and vanilla extract until just combined.
  4. In a separate bowl, whisk together flour, dry milk powder (if using), baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low until a soft dough forms.
  6. Gently fold in the rainbow sprinkles until evenly distributed. Avoid overmixing.
  7. Scoop dough into 1.5-inch balls. Optional: Roll each ball in granulated sugar for extra sparkle.
  8. Place dough balls 2 inches apart on the prepared baking sheet. Add a few extra sprinkles on top for that perfect bakery look.
  9. Bake for 10-12 minutes, until the edges are set but centers are still soft. Do not overbake.
  10. Optional: For perfect round cookies, swirl a round cookie cutter around each cookie while still warm.

  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Sprinkle Tip: Use jimmies or confetti quins for best results. Avoid nonpareils as they tend to bleed color and affect the texture.
  • Flavor Boost: Add dry milk powder for a richer, bakery-style flavor.
  • Storage: Store cookies in an airtight container at room temperature for up to 5 days. Add a slice of bread to keep them soft.
  • Freezing: Freeze dough balls for up to 3 months. Bake straight from frozen, adding an extra minute to the baking time.
  • Seasonal Twist: Customize sprinkles for holidays — red & green for Christmas, pastels for Easter, or pinks for Valentine’s Day.
